Kookoo Sibzamini (Kuku Seebzamini) is a traditional Persian dish that has been enjoyed for generations as a comfort food and quick meal. The word "Kookoo" refers to Persian-style frittatas or patties, while "Sibzamini" means potato in Persian. This dish is often made with boiled and mashed potatoes, combined with eggs and simple spices, then fried until crispy. Kookoo Sibzamini is similar to potato latkes or hash browns, but with a uniquely Persian twist. It’s commonly served as a light lunch, side dish, or snack, often accompanied by yogurt, pickles (torshi), or fresh herbs.

Ingredients
- 3 medium potatoes, boiled and mashed
- 2 large eggs
- ½ medium onion, grated and squeezed to remove excess liquid
- ½ tsp turmeric
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp all-purpose flour (optional, for a firmer texture)
- 2 tbsp fresh parsley or cilantro, chopped (optional)
- 3 tbsp vegetable oil, for frying
Directions
Prepare the Potatoes:
Boil the potatoes until fork-tender, about 15 minutes. Drain, peel, and mash them in a bowl.
Mix the Ingredients:
Add the grated onion, eggs, turmeric, salt, black pepper, and flour (if using). Stir in fresh parsley or cilantro for added flavor. Mix well until a smooth, thick batter forms.
Shape & Fry the Patties:
Heat vegetable oil in a pan over medium heat. Shape the potato mixture into small patties (about 2 inches wide). Fry each patty for 3-4 minutes per side, until golden and crispy.
Serve & Enjoy:
Drain on a paper towel to remove excess oil. Serve warm with yogurt, fresh herbs, or torshi (Persian pickles).
