Baghali Ghatogh is a beloved dish from Gilan province in northern Iran, known for its rich, herbaceous flavors and simplicity. It is traditionally made with fresh or dried fava beans (Baghali), garlic, and dill, creating a unique aroma. The dish is typically served with Persian rice (kateh) and sometimes with pickles or yogurt. Baghali Ghatogh is often enjoyed in cooler months due to its comforting and nourishing properties. The use of dill (shevid) gives it a distinct, earthy taste, while eggs, which are gently cooked in the stew, add richness and protein.

Ingredients

2 cups fresh or dried fava beans (peeled)

3 cloves garlic, minced

2 tbsp olive oil (or butter for richer flavor)

2 tbsp dried dill (or ½ cup fresh dill, chopped)

½ tsp turmeric

½ tsp salt (adjust to taste)

½ tsp black pepper

2 cups water

2 large eggs
Directions
Prepare the Fava Beans:
If using fresh fava beans, peel and rinse them. If using dried fava beans, soak them in water for 6-8 hours or overnight, then drain.
Sauté the Garlic & Dill:
Heat olive oil (or butter) in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in dried dill and turmeric, cooking for another 30 seconds.
Cook the Beans:
Add the fava beans, salt, and black pepper, stirring to coat with the spices. Pour in 2 cups of water and bring to a gentle boil. Reduce heat and let simmer for 15-20 minutes (or until the beans are tender).
Add the Eggs:
Crack the eggs directly into the stew, spacing them apart. Cover and let the eggs cook for 5-7 minutes, or until the whites are set but the yolks are still soft.
Serve & Enjoy:
Serve hot with Persian rice (kateh) or flatbread (lavash or sangak).

- For a thicker stew, reduce the water slightly.
- For extra richness, drizzle with melted butter before serving.
- For a spicier version, add a pinch of red pepper flakes.
- If fresh fava beans are unavailable, substitute with lima beans or baby broad beans.
