Noghl (نقل) is a traditional Persian confection, consisting of almonds (or other nuts) coated in a delicate sugar syrup infused with rosewater. These tiny, sweet treats are often served at Persian weddings, celebrations, and alongside tea. Their light crunch and floral aroma make them a beloved Persian sweet, often gifted or enjoyed during special occasions.
Noghl has been a staple Persian confection for centuries, originating from ancient Iran, where sugar-coated nuts and dried fruits were used in royal feasts and ceremonies. The delicate sweetness and floral aroma of Noghl reflect Persian culinary traditions, where rosewater and saffron have long been prized for their luxurious flavors.
Noghl is especially associated with Persian weddings, where it is traditionally thrown over the bride and groom as a symbol of sweetness, prosperity, and a blessed marriage. It is also a common offering at Nowruz (Persian New Year), funerals, and festive gatherings.

Ingredients

1 cup raw almonds slivers (or hazelnuts, walnuts, or pistachios)
- 1 cup sugar
- ½ cup water
- 1 tbsp rosewater
- ¼ tsp ground cardamom (optional, for warmth)
- ¼ tsp ground saffron (dissolved in 1 tbsp hot water, optional for color and aroma)
Directions
Prepare the Sugar Syrup:
In a small saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves, then bring to a gentle simmer. Add rosewater, cardamom, and saffron (if using). Continue simmering until the syrup slightly thickens (about 5-7 minutes).
Coat the Almond slivers:
Reduce heat to low and add the almond slivers to the syrup. Stir constantly, allowing the sugar syrup to coat the nuts as it crystallizes. Continue stirring until the almonds are fully coated with a white, powdery sugar layer.
Cool & Store:
Transfer the coated almonds onto a parchment-lined tray and spread them out. Let them cool completely before storing in an airtight container.
Serve & Enjoy:
Serve with Persian tea (Chai), at celebrations, or as a light sweet snack. Noghl is commonly placed on wedding trays, Nowruz tables, or gifted in decorative boxes.
